Asymptote

For the past few years, I have been working on nailing one dish: roast chicken with potatoes, carrots, and broccolini. There is a reason why chefs around the world consider it the meal they’re most likely to cook for those they love at home. When done well, it really is a magical dish. And while simple to do, there are so many dimensions related to improving it, that it remains a worthy challenge for all who love to cook.

I can’t say I have ever nailed it. The sauce, for example, is always a challenge. And while I have made some Tier 1 Taters in the past, they’re not a sure thing. I have had similar success with the chook, but I’m not immune to it being dry and tasteless.

Today we cooked a roast chicken for our friends, and while the vegetables were passable, the sauce forgettable, and the potatoes middling, the chicken was superb.

I’m asymptoting to the promised land, and having a blast doing so.
