Today was a very special day. Ky and I were able to criss cross our honeymoon with some very dear friends. Regular readers of this series will remember Lachy and Hanna, who recently wed in Tasmania, and are currently enjoying their honeymoon cycling from Switzerland to the sea. Hats off to them!

This evening, we had easily our best meal of the trip. Lachy and Hanna were extremely generous in taking us there, and there were some real standout dishes (and wines!).

For us, the knockout had to be the beef and mash. I went dangerous and went for it rare, which I think might be my preferred order. It was perfect, but the mash was a step above. By combining mash with little roasted potatoes, it was absolutely heavenly. I know butter goes a long way, but this way went even further than possibly imaginable.

Regardless, I feel that had we just spent the evening eating ham sandwiches, we would still have had a wonderful evening. Lachy and Hanna are a privilege and a great fortune in our lives, and the chances we get to spend together are limited. They live on a farm in Tasmania, we live in an apartment in Colorado.

Finding and making the time isn’t easy, but it’s magical when it happens.
