I made Pad See Yew tonight, and it wasn’t great. One reason was clear, I didn’t follow my gut.
The reason was obvious, the noodles were a little sticky, and much too chewy. They didn’t seperate either, meaning the stir fry wasn’t well integrated, even if the flavours were there. It was disappointing.
I’m not disappointed when my cooking goes wrong; experimentation and failure are part of the journey. What I didn’t like was how I KNEW I should have ignored the recipe and gone my own way. Two minutes of boiling water would have softened them up and made them good to go, even if the recipe said otherwise.
Even if my way was a disaster, it would have been my disaster. Anyway, there is always next time.
