We went to ANOTHER 1st birthday party this afternoon. It’s not that I’m complaining, I actually quite enjoy them, and today’s edition was top notch.
Feeding a crowd is difficult, so picking the right dishes is crucial. These guys nailed it by going with the Texas style pulled pork.
Pork in the US is absurdly cheap, and I don’t know what they’re feeding these pigs, but they’re huge. Throw them in the smoker or over for six hours, let all that collagen melt down into tender strands, and then serve with dinner rolls, sauce, mac and cheese, and salad (optional).
Everyone goes home both happy and most importantly, not hungry.
