With Ky going back to work tomorrow, the three of us took a much needed break to spend time together as a family.
First off, we went hiking. It was magical to be able to put Occi in our hiking backpack and show her something that the two of us love; getting out into nature.

Of course, halfway through she decided to unleash 72 hours worth of well marinated turd into her nappy, and naturally, we hadn’t brought a spare. Bear Grylls, the survival expert, was famous for a quote “Adapt. Improvise. Overcome”, and that is exactly what we did.
With Occi now feeling a LOT lighter, we were able to enjoy the rest of our walk.

When we got back, I was straight on the tools, making my favourite dish, Beef Wellington. It’s a labour of love, and I think I was cooking for 3.5 hours to bring it all together. It isn’t necessarily complex, but there are a LOT of moving parts, and at one point we had all four burners going for the carrots, the mash, the milk, and the red wine reduction. It turned out a treat; it really is as good as it gets.
